Heya folksies,


Not too much is happening. I'm exhausted, I'm on my 12th straight day of work. I have 1 more day to work this week and then I'm off for 3 glorious days. (Of course, I have to fit Thanksgiving into that too. UGH) I really just want to veg out.


I'll post my recipe for Sausage Stuffed Mushrooms tomorrow. I usually make them every year for Thanksgiving. I'll be making them for this years feast as well.


I was in Denver last week for a week-long training seminar. (Which is why I'm sooo bloody exhausted this week.) I really learned alot, and some interesting things happened. I'll talk more about that as time permits.


I went and got my nails done today. I actually have my nail tech keep them pretty short, just past the tips of my fingers, because I do so much typing. She talked me into this shimmery bronze color, which would look awesome if I wasn't so pastey white, I'm not to excited about. Oh well ... I only have to live with them for 2 weeks.

1. Only in America......can a pizza get to your house faster than an ambulance.
2. Only in America......are there handicap parking places in front of a skating rink.
3. Only in America......do drugstores make the sick walk all the way to the back of the store to get their prescriptions while healthy people can buy cigarettes at the front.
4. Only in America......do people order double cheeseburgers, large fries, and a diet coke.
5. Only in America......do banks leave both doors open and then chain the pens to the counters.
6. Only in America......do we leave cars worth thousands of dollars in the driveway and put our useless junk in the garage.
7. Only in America......do we use answering machines to screen calls and then have call waiting so we won't miss a call from someone we didn't want to talk to in the first place.
8. Only in America......do we buy hot dogs in packages of ten and buns in packages of eight.
9. Only in America......do we use the word 'politics' to describe the process so well: 'Poli' in Latin meaning 'many' and 'tics' meaning 'bloodsucking creatures'.
10. Only in America......do they have drive-up ATM's with Braille lettering.
11.Only in America.....Will you go to a restaurant at SeaWorld and ask for band aids and get mayonnaise

~Recipe of the Day~

Penne w/ Bacon, Spinach & Mushrooms

Ingredients:

1 box (16 oz) penne
10 slices bacon (about 1/2 lb)
1 medium onion, halved and sliced thin
1 pkg (8 oz) sliced mushrooms
2 cloves garlic, sliced
1/4 tsp crushed red pepper flakes
1 pkg (12 oz) fresh baby spinach
Grated Parmesan

Directions:

1. Cook pasta as package directs.

2. Meanwhile, cook bacon in a large, deep nonstick skillet over medium heat until browned. Remove bacon to paper towels to drain. Remove all but 2 Tbsp fat from skillet.

3. Add onion and mushrooms to skillet; sauté 5 minutes until onion is golden. Add garlic and red pepper flakes; cook 30 seconds until fragrant. Add spinach; cover and cook, stirring occasionally, 2 minutes until wilted.

4. Drain pasta, reserving 1 cup pasta water. Add pasta to skillet with some of the reserved pasta water; toss. Add more water as necessary. Crumble bacon on top of pasta and serve with Parmesan.
