ஜ~§Recipe of the Day§~ஜ


Penne w/ Vodka Sauce and Pancetta

Ingredients:
12 ounces whole-wheat penne
2 ounces capicola or pancetta, finely diced (see Tip)
1 small onion, chopped
3 cloves garlic, chopped
1/2 cup vodka
1 (28 ounce) can crushed tomatoes
1/4 cup half-and-half
2 teaspoons Worcestershire sauce
1/4 teaspoon crushed red pepper
1/4 cup chopped fresh basil
Freshly ground pepper to taste

Preparation:
Bring a large pot of water to a boil. Cook penne until just tender, 12 minutes or according to package directions.

Meanwhile, cook pancetta in a large saucepan over medium heat until crisp, about 4 minutes. Drain on a paper towel.

Return the saucepan to medium-low heat; add onion and garlic and cook until the onion is translucent, about 1 minute. Increase heat to high; add vodka and bring to a boil. Boil until reduced by about half, about 2 minutes. Stir in tomatoes, half-and-half, Worcestershire sauce and crushed red pepper to taste; reduce to a simmer and cook until thickened, about 10 minutes.

Drain the pasta; serve topped with the sauce and sprinkled with the capicola (or pancetta), basil and pepper.

Yield: 6 servings

How about mountains near the ocean? I like mountains a lot, but I like being near water too.

The word of the day is making me shiver. Ewww.

And penne with vodka sauce and pancetta? I think you might sweet on me or sump'n ;) Man, that sounds good!

I don't know, I think the mountains since that what I live closer too so I don't have to move far and the sunsets over the mountains are just as spectacular as the ones over the oceans.

I just finished reading Salvation in Death. That was pretty good. But I was expecting Promises in Death first so I was a little confused for the first couple chapters. :)

Seeing that I live in the prairies, I'd sooner have the mountains than the ocean.

The recipe sounds yummy. Just what is pancetta? I've never heard of it. :s

I think I'd like the ocean better, hah ... I've always said if I win the lottery I'd move to the southern coast of Ireland.

Dogisms, I hadn't even heard of Promises in Death. (Odd since I usually check NR's site nearly every week) I thought Salvation in Death was good ... once you hit about the second half of it. There were so many characters I sort of got lost.

Rottie, I live in the prairie too ... I'm a water sign though, so I'd definately prefer to live near water, I'm really tired of being landlocked.

Pam, I haven't used PokerStars ... I'll check it out and let you know if I get on there. Does it work like the PartyPoker site does? (If you've ever been to that one that is)

Rottie, Pancetta is an Italian bacon that is cured with salt, pepper, and other spices, but is not smoked. Unlike English and American bacon, which are taken from the sides and belly of the pig, may be smoked, and are usually cut into slices, pancetta comes only from the belly, is salt-cured but not smoked, and is generally sold rolled up into sausage shapes.
