I had a class today from 7am to 3pm after working last night until 11pm. Jeez I'm exhausted.

Here's a funny for ya, no offense to you Irish folk.

AN IRISH BLONDE IN A CASINO

An attractive blonde from Cork , Ireland arrived at the casino.
S he seemed a little intoxicated and bet twenty-thousand Euros on a
single roll of the dice.

She said, 'I hope you don't mind, but I feel much luckier when
I'm completely nude'.

With that, she stripped from the neck down, rolled the dice and
with an Irish brogue yelled, 'Come on, baby, Mama needs new clothes!'

As the dice came to a stop, she jumped up and down and
squealed...'YES! YES! I WON, I WON!'

She hugged each of the dealers and then picked up her winnings
and her clothes and quickly departed.

The dealers stared at each other dumbfounded.

Finally, one of them asked, 'What did she roll?'

The other answered,

'I don't know - I thought you were watching.'

Panang Tofu Curry




Ingredients:
1 1/2 tablespoons olive oil
1/2 cup finely chopped shallots
2 tablespoons finely grated peeled ginger
4 garlic cloves, finely chopped
1/4 cup organic peanut butter
2 teaspoons turmeric
1 teaspoon ground cumin
1 teaspoon hot chili paste (such as sambal oelek)*
1 cup water
1 13 1/2-to 14-ounce can organic light coconut milk
3 kaffir lime leaves or 3 tablespoons fresh lime juice and 1 1/2 teaspoons finely grated lime peel
1 tablespoon (firmly packed) golden brown sugar
2 14-ounce packages organic firm tofu, drained, cut into 1-inch cubes 1 1/2 cups 1/4- to 1/3-inch-thick slices peeled carrots (about 3 medium)
1 1/2 cups 1/4- to 1/3-inch-thick slices peeled carrots (about 3 medium)
1 large red bell pepper, cut into 3/4-inch pieces

Preparation:
Heat oil in heavy large skillet over medium-high heat. Add shallots, ginger, and garlic; cook until shallots are tender, about 6 minutes.

Add peanut butter, turmeric, cumin, and chili paste; stir until fragrant, 1 to 2 minutes. Whisk in 1 cup water, then coconut milk, lime leaves, and brown sugar; bring to simmer. Season sauce with salt.

Add tofu, carrots, and bell pepper; simmer over medium heat until carrots are tender, adjusting heat to medium-low if beginning to boil and occasionally stirring gently, about 20 minutes.

Season to taste with salt.

DO AHEAD: Can be made 3 days ahead. Cool slightly, cover, and chill. Rewarm over medium heat before serving.

* Available in the Asian foods section of many supermarkets and at Asian markets.

Here's a quick funny for ya. (Caveat-I'm not a teacher, it's just how the story reads)

Show and Tell

One day this little girl, Erica, a very bright, very outgoing kid, takes her turn and waddles up to the front of the class with a pillow stuffed under her sweater.

She holds up a snapshot of an infant. 'This is Luke, my baby brother, and I'm going to tell you about his birthday.'

'First, Mom and Dad made him as a symbol of their love, and then Dad put a seed in my Mom's stomach, and Luke grew in there. He ate for nine months through an umbrella cord.'

She's standing there with her hands on the pillow, and I'm trying not to laugh and wishing I had my camcorder with me. The kids are watching her in amazement.

'Then, about two Saturdays ago, my Mom starts saying and going, 'Oh, Oh, Oh, Oh!' (Erica puts a hand behind her back and groans.) 'She walked around the house for, like an hour, 'Oh, oh, oh!' (Now this kid is doing a hysterical duck walk and groaning.)

'My Dad called the middle wife. She delivers babies, but she doesn't have a sign on the car like the Domino's man. They got my Mom to lie down in bed like this.' (Then Erica lies down with her back against the wall.)

'And then, pop! M y Mom had this bag of water she kept in there in case he got thirsty, and it just blew up and spilled all over the bed, like psshhheew!' (This kid has her legs spread with her little hands miming water flowing away. It was too much!)

'Then the middle wife starts saying 'push, push,' and 'breathe, breathe'. They started counting, but never even got past ten. Then, all of a sudden, out comes my brother. He was covered in yucky stuff that they all said it was from Mom's play-center, (placenta) so there must be a lot of toys inside there. When he got out, the middle wife spanked him for crawling up in there.'

Then Erica stood up, took a big theatrical bow and returned to her seat.

What's the story behind your username?

Aha! I knew you always wanted to know this about me. Surry is a shortened form of Surreptitious. Surreptitious is my FAVORITE word in the dictionary. When I first started chatting my FIRST ever username was Surreptitious_Poet. When I was in yahoo chat it was shortened to Surry. Later I found that my favorite flower was the Sweetpea, smells nice, easy to grow. (so I'm told, I have a black thumb) I was getting too much junk mail under surreptitious_poet, so I created a new account. Piscean_river_walker (don't freakin ask, I believe I was just getting into learning about pagan paths) the 'Nickname' under my new account is now SweetPeaSurry. YAY. That's my story and I'm stickin' to it!!!

Pan-Roasted Pork Chops with Cranberies and Red Swiss Chard





Ingredients:
For Swiss chard
1/3 cup minced shallots (2 medium)
1 tablespoon minced garlic
2 tablespoons unsalted butter
1 lb red Swiss chard, stems and center ribs cut out and chopped together, leaves coarsely chopped separately

For pork chops
4 (1 1/4-inch-thick) rib pork chops
1 1/2 tablespoons extra-virgin olive oil

For sauce
1/3 cup minced shallots (2 medium)
1/2 cup dry red wine
1 cup fresh or thawed frozen cranberries (4 1/2 oz)
3/4 cup chicken stock or broth
3 tablespoons packed light brown sugar
1 1/2 teaspoons chopped fresh thyme or 1/2 teaspoon dried, crumbled
2 tablespoons unsalted butter

Preparation:
Preheat oven to 400°F.

Prepare Swiss chard:
Cook shallots and garlic in butter in an ovenproof 12-inch heavy skillet over moderate heat, stirring, until golden, about 5 minutes. Add chard stems and center ribs and cook, covered, stirring occasionally, until crisp-tender, 3 to 4 minutes. Add leaves and cook, uncovered, stirring occasionally, until tender, 6 to 7 minutes. Season with salt and pepper, then transfer chard to a heavy saucepan and wipe out skillet.

Cook pork chops:
Pat chops dry and season with salt and pepper. Heat oil in skillet over moderately high heat until hot but not smoking, then brown chops, about 3 minutes per side.

Transfer skillet to oven and roast until an instant-read thermometer inserted horizontally 2 inches into meat registers 155°F, 7 to 9 minutes. Transfer chops with tongs to a platter, leaving fat in skillet, and cover chops loosely with foil to keep warm.

Make sauce:
Sauté shallots in fat remaining in skillet over moderately high heat, stirring, until golden, about 5 minutes. Add wine and deglaze by boiling over high heat, scraping up brown bits, until reduced by half. Add cranberries and stock and simmer, stirring occasionally, until cranberries begin to burst, about 2 minutes. Stir in brown sugar and thyme and simmer, stirring, until berries are collapsed, about 3 minutes. Remove from heat and stir in butter until incorporated, then season with salt and pepper.

Assemble dish:
While sauce is cooking, reheat chard over moderate heat, stirring. Divide among 4 plates and top with chops, then spoon sauce over.

No Man Is An Island

Hey guys!

I've been a bad little bloggy friend. I haven't really blopped or done anything. No particular reason for it, except I've been playing alot on FB and less on BS and Twitter. I'll try to do better, I'm following so many interesting blogs, and now that I'm so far behind, it's like I'll never get caught up!

Anyway, I taught my first Safety Culture class as a certified instructor the day before yesterday. I think it went really well. There are some people who are completely against the process, and that was forseen. It's still difficult when there is dissention though, as I really believe in the process, not only for safety but as a philosophical way of life.

In addition, I found out the other day that one of the other certified trainers, one that I spent two weeks with in Denver for the train-the-trainer courses is currently bad-mouthing the way we're progressing with the Safety Culture roll-out. That is also disconcerting to me, how are we to expect other's to keep an open mind when one of the trainers won't even do it. It's very frustrating. I'll keep ya'll abreast of how things are shaking down on that front, as I'm sure you're waiting with bated breath for the information on the outcome. :)

ஜ~§Recipe of the Day§~ஜ


Ginger Glazed Mahi Mahi





Ingredients:
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or to taste
2 teaspoons olive oil
4 (6 ounce) mahi mahi fillets
salt and pepper to taste
1 tablespoon vegetable oil

Preparation:
In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.

Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.

Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.

Yield: 4 servings
